Our Newest CSA Pickup Location at Apothecary Off Main | Vista’s Natural Farm

We are incredibly excited to announce our newest partnership with one of our local favorites. We have officially teamed up with Apothecary Off Main in downtown Vista to bring you even more ways to pick up your CSA box.

I visited today to get some exclusive photos of all of the incredible products that are offered there and I was blown away by the quality and variety of products available. Besides their selection of amazing smelling and hilariously named candles, they also carry hand crafted beard oils and creams. Apothecary Off Main carries every available product by J.R Watkins, which has been making products since 1868. I can’t wait to share some new recipes using their natural spices! (( P.S. CSA subscribers get a special discount on these spices!))

We are opening signups today for our launch on Thursday, September 18th, 2014. Boxes will be available for pick ups on Thursdays, and there will be a limited amount of extras on hand if you want to try one out! We suggest signing up ahead of time, because the trial boxes will be on a first come, first serve basis!

Signup here today!! And remember, if eligible, you may be able to use PayPal Credit to make your purchase of your CSA Subscription for six months, interest free!

You can find out more about Apothecary Off Main on their website and say hello on Facebook. When you stop in, tell them we sent you!

Easy Stovetop Ratatouille Recipe | San Diego’s Natural Farm Stand

easy stovetop ratatouille from www.coupleberryfarms.com

When life gives you tomatoes, eggplant, squash and peppers, make ratatouille!

This is a wonderfully adapted recipe for some delicious summertime veggies that even my six year old scarfed down (and asked for more!).

Stovetop Ratatouille from Couple Berry Farms

Ingredients

1/4 cup Olive Oil

1 Large Onion, chopped

1 Large Clove of Garlic

2 Large Heirloom Tomatoes

1 Large Eggplant, skinned and cubed

2 Small Zucchinis or Yellow Squash, cubed

1 Bunch of Fresh Basil, finely chopped

1 Green Pepper, seeded and chopped

2 Banana Peppers, seeded and chopped

Salt to taste

3 Italian Sausages, chopped into small pieces

Optional- Mozzarella or Parmesan Cheese

Instructions

In a large pot, on medium heat, sauté onion and garlic in olive oil. Meanwhile, in a medium pan begin to cook sausage. Once onions are slightly caramelized, add remaining chopped ingredients into the pot, excluding the cheese. Cook on medium for about ten-fifteen minutes until veggies are nice and soft, then add fully cooked sausage. Add salt to taste.

Serve in a bowl with lots of cheese, and enjoy!

Get the ingredients this Thursday- Saturday from our Vista Farm Stand located at 629 Mar Vista Dr. Vista CA, or find the ingredients in your CSA box. Sign up for your trial box here!

Green Smoothie with a Little Twist | Vista’s Natural Farm Stand and CSA Provider

Quick Smoothie RecipeStrawberries, ginger, spinach, beets

Here’s a simple recipe that can be mixed up quickly in the blender, or skip the water and throw it in the juicer with great results. It’d be a green drink, but the extra flair of beets make it a lovely deep pink color, and a great source of iron. Add kombucha for a Vitamin B boost with detox benefits!

Ingredients:

3 Cups Frozen Couple Berry Farms Strawberries (Use fresh if juicing)

3 Stalks of Celery

1 hunk of ginger (I love ginger! Use a bit less if it’s not your fancy)

1 Handful of Couple Berry Farms greens (baby spinach blends more smoothly, but kale is great, too)

1/4 of a Couple Berry Farms Beet

Filtered Water

Optional

Drip of Lemon Juice

One cup kombucha

Put all ingredients in except water, using one cup of kombucha and lemon juice if desired. Then fill blender with water to just barely cover contents. Blend on high until smooth. Enjoy!

All of these ingredients but the ginger and celery can be found at our free standing Farm Stand  in Vista, or in our weekly CSA boxes. And don’t forget that we’re open Thursday- Friday 1-6 pm and Saturday 9-5pm.

Hope to see you soon!
