Did you know this is the first year that we’ve stayed open year-round?? Thank you so much for your support! It’s because of our great customers that we were able to make that happen! We’ve got even greater things in store for this upcoming year. Did you know we’re about to install our very first bee box? Yep!!

Smoky Butternut Squash Soup w/ Sausage | Vista’s Natural Farm Stand


Today’s recipe is inspired by PaleoOMG’s Smoky Roasted Acorn Squash and Sausage Soup. 

I love PaleOMG! She has such an incredible database of crafted recipes. If you’re looking to be inspired, it’s a great site.

 

I can’t get over how simple this soup was. I tend to think of a soup as something finely crafted, and an all day process, but this was not one of those recipes!

Did I mention…. no giant soup pot?

 

Ingredients:

2 butternut squash, halved
1.5lbs chicken sausage
1 yellow onion, diced

1 garlic clove, minced
½ cup milk (raw, coconut, or whole)
½ cup broth (veggie, chicken, or beef)
1 tablespoon smoked paprika (I used Trader Joe’s South African Smoke Blend)
½ teaspoon cayenne pepper
salt and pepper to taste

 

Preheat to 400. Slice your squash into halves, and place face down in a baking dish. Bake for 20-25 minutes until the inside is tender. While this is baking, heat up your pan and toss in your sausage. Once it’s halfway cooked, add the garlic and onions. Saute until onions are slightly browned and translucent.  Add oil if needed.

 

Once squash is baked, let it cool a bit, and scoop out the seeds. Scoop the squash into the food processor, and pour in milk and broth, blend until smooth. Add spices, salt, and pepper, blend once more until smooth. Serve with sausage as garnish, and enjoy!

Spaghetti Squash is delicious alternative to pasta. It hits the spot for those evening when you need to make a simple, comfort food meal, is low carb, and full of vitamin C. Enjoy this simple recipe from Couple Berry Farms.

Ingredients:

1 Spaghetti Squash

Salt and pepper to taste

Spaghetti sauce of choice.

Preheat your oven to 350. Cut your spaghetti squash in half, lengthwise and scoop out the seeds. Place in large baking dish and bake for 30-45 minutes.

Take out of the oven and let cool a bit so you can handle it. Use a fork and scrape down in the direction of the squash’s string pattern. If you do it the other direction, you may possibly mash the strings, and it won’t be very spaghetti-esque.

Top with butter and salt, Parmesan cheese, or your favorite spaghetti sauce, and enjoy!

Parsley and Cashew Pesto Salad Recipe from Couple Berry Farms

We’ve got some pesto fans in our family, and have enjoyed finding different combinations to make a nice variety in our meals. If my kids will eat a salad because of a fresh pesto, who am I to stop them? This is a fun twist on traditional pesto, using parsley and cashews for a creamy, tasty pesto.

 Parsley and Cashew Pesto Salad Recipe from Couple Berry Farms

Pesto Ingredients:

1 Bunch of Italian Parsley (about two cups)

1/2 cup Cashews, unsalted

1/2 cup Kerrygold Cheese

1 Large or 2 Small Garlic Cloves

1/2 cup Olive Oil (Depending on preference, you can can use 2/3 to make it more of a sauce-consistency)

Salt to taste

 

Other Ingredients:

Baby Spinach

Handful of Grape Tomatoes

 

Optional:

Chicken

Place dry pesto ingredients in food processor (all except oil) and blend for about 30 seconds. Parsley and Cashew Pesto Salad Recipe from Couple Berry Farms

Add olive oil. We prefer thicker pesto, but you can add a bit more to make it more sauce-like. Add salt to taste.

Add a dollop of finished pesto to a bowl of baby spinach greens, and top with your favorite salad toppings.

We’re Open for Two Days a Week!

This is what so many of your have been waiting for, we’re now open on Wednesdays. Weekends can be crazy and busy for everyone, but now you can still squeeze in some time in the middle of the week to grab your groceries or restock your strawberry supply since Saturday. We all know how fast those disappear.

Don’t forget to grab some corn and fresh tomatoes for your Independence Day BBQ’s.

We hope you’ll come by with the family and stock up on some new items and old favorites. We’re open weekly Saturday’s 9am-5pm and Wednesdays 1pm-6pm.

Sauteed Summer Herb and Veggie Side Dish | Vista Natural Farm Stand

This week’s recipe is based on some summer favorites, available right here, at Couple Berry Farms.

There’s nothing quite like the combo of summer veggies and fresh herbs, and this dish complements nearly every main dish!

Ingredients:

1 Large onion, chopped

1 Large handful of Couple Berry Farms green beans, halved

1 Garlic clove, minced

1/2 Bunch of Couple Berry Farms thyme (remove leaves from stems)

2 small (or one large) Couple Berry Farm zucchini, chopped

1-2 Tbs your choice of oil (I used bacon grease, but you can use coconut oil or olive oil)

Salt and Pepper to taste

Optional:

1/4 cup Kerrygold Dubliner cheese, shredded

This recipe is a quick- moving one, so make sure to have your veggies chopped and prepped before you start cooking 🙂

Heat up a large pan to medium/high and place oil inside inside. Once hot, toss in your chopped onions and green beans.

When onions just begin to turn brown and caramelize, put in zucchini, thyme, minced garlic. Be sure to stir well, and remove from heat once zucchini begins to brown. If overcooked, the zucchini will become very soft. After removing from heat, you can sprinkle some high quality shredded cheese on top and mix it in to up the yum-factor.
