2014 Winter Reopening Update

Hey lovely people!

 

We just wanted to give everyone an update on where we stand on a reopening date. January, and now February, have been a busy, busy time here at Couple Berry Farms. Farmer Butch has been tilling, planning, and replanting for the upcoming season. We’ve just received our latest addition of strawberry starters, 3,000 to be exact! This new variety will be able to withstand the hot summer and fall days.

We also have some very exciting news. We’re making the final preparations for installing a well! This is an incredible opportunity for the farm, as it will provide us with a higher quantity AND quality of water. We’re so happy to begin using fresh water without added chemicals and fluoride from the city water, as we’ve noticed a big difference in the growth and health of our trees since its addition to our water source. We also are going to be able to plant and support even MORE produce to keep up with our amazing customers.
We will be opening March 8th!!

Unfortunately, in order to install the well and prepare the drilling area, we’ve had to spend quite a bit of our time relocating our raspberry patch, so our reopening date has been moved back by about three weeks. We will continue to keep you all updated on our progress, and have photos of the new well (drilling begins next week!).

Two Ingredient Summer Sorbet

Welcome, Summer! Summer is a great time at Couple Berry Farms, because it means there are a lot of new crops joining the stand. Green beans, zucchini, and my favorite… raspberries!

This sorbet is a perfect treat to whip up on a warm summer day, and seriously only has two ingredients, raspberries and bananas!

Ingredients

1-(or 1 1/2 cups) Box of Couple Berry Farms Raspberries,  frozen

1- Ripe Banana

Makes 2-3 servings

 

Stick your box of raspberries in the freezer over night, or few a few hours, until it’s fully frozen.

Place in food processor with one ripe banana, the riper, the better. A greener banana will not have the best flavor. Blend in food processor or blender until smooth. Scoop, and enjoy!

It’s so easy to make more servings, just remember, one banana per box of raspberries 🙂

Grilled Peach and Strawberry Salad with Mint Pesto Dressing | Vista’s Natural Farm Stand

Couple Berry Farm’s Grilled Peach and Strawberry Salad with Mint Pesto Dressing

Salad Ingredients:

3 Small Peaches, sliced
1 cup Strawberries, sliced*
2 tsp. Olive Oil
2 tsp. Balsamic Vinegar
1 large package of Couple Berry Farms salad mix (We used our “Elegant Green” Arugula mix)*
Sliced mozzarella, or rolled into a ball and sliced in half
A few dollops of Pesto (see ingredients below)
Pine nuts or Walnuts to top (toasted or raw)
Salt and Pepper
Pesto Ingredients:
1 packed cup of mint* and basil*
¼ cup pine nut or walnuts (we used walnuts)
½ garlic clove
¼ cup olive oil (more if you prefer the pesto to be thinner)
Salt and pepper to taste

*Available fresh from Couple Berry Farms!

Step One:

Add all pesto ingredients to food processor and pulse until desired texture is achieved.  At this time, you can add more olive oil and/or balsamic vinegar if you want it to be thinner like a dressing.

Step Two:

Slice peaches and toss with olive oil and balsamic vinegar in a small bowl.  If the peaches are  large, you can place directly on grill over medium heat for a few minutes. OR, if peaches are  smaller, take one foot of aluminum foil and fold in the corners to make a small basket/tray.   Place peaches in the foil and place on hot grill. Grill on high for about 3 minutes, until the liquid is slightly bubbly.  The foil prevents burning.  (Strawberries also taste delicious when grilled and can be added with the peaches!)

Step Three:

Toss salad mix with olive oil and fresh ground pepper and salt.  Top with sliced strawberries, grilled peaches, dollops of pesto, chopped walnuts, and sliced mozzarella balls.  If desired, toss with a few teaspoons of balsamic vinegar.
