Welcome to a summertime party in your mouth! This is a perfect recipe for using those large zucchinis from the garden, and great for using whatever meat or spices you have on hand.
1 Large Zucchini
*1/2 lb Sausage, chopped
3 Slices of Bacon
1/4 cup of Kerrygold Grassfed Cheese
1 handful of Basil
*I used 1/2 lb of sausage for filling one half of a GIANT zucchini. If your zucchini is the size of your arm and you want to fill each half, you can double the meat. The 1/2 lb should be plenty for smaller sized squash.
Preheat your oven to 350. Cut your zucchini in half. Be sure to keep the ends intact.
At an angle, cut along the edges of the zucchini, leaving room on the sides to hold in the stuffing. Cut lines vertically every inch or so, and then again horizontally, to make squares. (This will make it easier to scoop out the inside.) Run a spoon along the outer cuts to scoop out the zucchini. Pat the inside of the zucchini “bowls” with a paper towel to remove excess moisture.
Place the pieces in a separate bowl for later.
Using a large, deep pan, cook your bacon and sausage (crumbled) at medium/high heat. While they are cooking, chop your basil.
Once they begin to brown, place your zucchini in the pan with the bacon and sausage. Once bacon is finished, pull from the pan and separate. Stir well and add the basil to the pan. Cook until the zucchini just begins to soften, then pour the contents of the pan into the zucchini “bowl.”
Chop your bacon into bits and sprinkle it with cheese on top of the “stuffing.”
Bake uncovered for 30 minutes, and enjoy!

There’s nothing quite like the combo of summer veggies and fresh herbs, and this dish complements nearly every main dish!
1 Large onion, chopped
1 Large handful of Couple Berry Farms green beans, halved
1 Garlic clove, minced
1/2 Bunch of Couple Berry Farms thyme (remove leaves from stems)
2 small (or one large) Couple Berry Farm zucchini, chopped
1-2 Tbs your choice of oil (I used bacon grease, but you can use coconut oil or olive oil)
Salt and Pepper to taste
1/4 cup Kerrygold Dubliner cheese, shredded
This recipe is a quick- moving one, so make sure to have your veggies chopped and prepped before you start cooking 🙂
Heat up a large pan to medium/high and place oil inside inside. Once hot, toss in your chopped onions and green beans.
When onions just begin to turn brown and caramelize, put in zucchini, thyme, minced garlic. Be sure to stir well, and remove from heat once zucchini begins to brown. If overcooked, the zucchini will become very soft. After removing from heat, you can sprinkle some high quality shredded cheese on top and mix it in to up the yum-factor.
